About Us
We in Ireland have long memories. The aromas from the kitchens of our childhoods remain while many other things are forgotten. I hope that Paddy Mac's will revive these memories and bring pleasure to all of those who dine with us.
The recipes we use have been drawn from all sections of Irish life, both rural and urban, and many are still cooked daily. The food of a country is part of its history and civilization and ideally the past and the present should be combined so that traditional food is not lost, and the present helps to provide a new and exciting presentation of unforgettable recipes.

Ann Gibbons, Head Chef at Paddy Mac's, born in County Galway , Ireland. Ann arrived in the United States in 1988, having previously worked as a Chef in Ashford Castle Hotel, Cong, County Mayo , Ireland. Ann was reunited with Chef Wade at Harpoon Louie's before moving to Paddy Mac's where she currently holds the position of Chef in charge of dinner. Ann is very talented at baking and is in command of a crew of eight at night. Ann assisted Chef Wade in opening Paddy Mac's Restaurant, rated one of the top one hundred restaurants in the Palm Beach County . |

Monica Rojas (nee Ferry) Day Chef at Paddy Mac's, born in County Donegal, Ireland. Monica arrived in the United States in 1982, having previously worked as a Pastry Chef in Ashford Castle Hotel, Cong, County Mayo . Monica assisted Chef Wade in setting up a culinary team at Harpoon Louie's; the top ten grossing restaurant in the United States. Monica assisted Chef Wade in opening Paddy Mac's Restaurant, rated one of the top one hundred restaurants in Palm Beach County. Monica commands a crew of five, serving the best lunches in Palm Beach County . |

Robin Sullivan , Florida Native, Day Bartender and Day Time Manager. Robin also was a Manager at Harpoon Louie's before moving to Paddy Mac's to join the team. Robin has worked with Chef Wade over a period of twenty-four years and brings a wealth of managerial experience. Robin among the Paddy Mac's Family is fondly known as "Mom". |
